I love to make a good broth with roasted chicken bones, dried mushrooms, mirepoix, wakame, and shoyu. Serve it with diced chicken, buckwheat soba, and sauteed baby bok choy.

I also LOVE pureed squash soup. Kabocha, red kuri, butternut, acorn, etc. Roast them, scoop the flesh, puree with stock, cream, and seasonings. Great with a spoonful of rice and some fresh herbs.

Whether it's a stew or soup, gumbo is god-tier for cold months since it's served piping hot.
