It's the buns, man. The buns are the one thing that all burgers have, but everybody ignores.

imo, buns on a burger are like tires on a race car. You can have the biggest, most powerful engine on the track, but if your tires are shit, it won't matter a damn. Same with a patty and the bun.

Meyer has proven that for many customers the price point between Wendy's and Applebee's is acceptable for a fast food burger where:
- the meat is sourced at a level well above commodity grade
- the employees are better paid
- the food reflects a higher level of quality and creativity than what's found in fast food

David Chang is doing the same thing with fried chicken sandwiches at the moment.

This is legit. There's a market of people who don't mind the idea of fast food, but are put off by the low quality standards of fast food establishments. Many of these people are happy to pay $12-$15 for lunch if it means they can enjoy a fast food burger without ever having to set foot in McD's or BK again.

If you have a decent job paying a little extra to avoid eating commodity grade beef makes sense. Especially when the burger is a really fucking good example of what it is. The few extra bucks is costs isn't really meaningful to you.

>semi-premium chains just stepping into the hole left as industrial livestock and other changes took place in the 1980's - 90's?
Except that the quality of most commodity grade meat in the US had gone to shit by the late 70's, and McDonald's quality along with it. This failed to hurt them because it happened when they were very successfully expanding into the breakfast market. That delayed any fallout from the lower quality meat they were using until the late 80's and early 90's, when you saw the value menu and the supersize options introduced. That's what cemented their reputation as a place where fat and poor people ate, which drove the middle class away from them.

But the middle class still wants a fast food burger. They're just put off by the notion of eating food made from the cheapest possible ingredients. If you can prove your burger is better than that they will pay a premium for it.

>> No.6926520

>>6926504

>I'm just never sure if it's that regular fast food got shittier, the taste of the middle class went up, or both.
Probably a bit of both. McDonald's was always made from the cheapest ingredients possible, but the quality of commodity grade stuff is much lower today than it was in the 1960's.

Also dining out was a very novel thing for the middle class. In cities lunch places were well established, but the only people who ate dinner out on a regular basis were single men. Unmarried women tended to live with their parents, and married men came home to a dinner their wife had cooked for them. The generation McDonald's helped convince that taking the family out for burgers was fun and wholesome were not savvy diners. The cleanliness of the place probably meant more to them than the actual taste of the food.

Today's diners have eaten out much more than their counterparts from three or four decades ago. There's every reason to think their standards are higher.

Nature of the beast. Chang failed at his first attempt to do an upscale fast food thing back in 2006. Restaurant business is a bitch. Have a Fuku sandwich.

Come on now where is the chipotle, and blue cheese on a grilled lightly crispy on the outer rim sesame seed bun, maybe with some jalapenos, and even bacon if you want.

white bread that's not even toasted what? and why did you put one piece of bread below the other it makes no sense. not to mention that mustard to ketchup ratio is way off. you'll be lucky to even taste any mustard at all. and even then it would just be on the edges. this must be a bait and if not either way you wasted a good beef patty

the only place i know of that makes better burgers than the one i make at home is at Vortex in Atlanta. Been to both the downtown spot and the 5 points spot and they're comparable but the downtown spot has a better atmosphere. Anyway yeah that burger is better than 95% of restaurant burgers. Half the restaurants you go to, they'll have a tough time even getting it cooked to order correctly, not to mention it will likely be over seasoned.

>cooked to order
>not getting your burger medium

I used to be medium rare, sure. But a burger should be medium, so the fat has enough heat to become liquid and juicy. A burger is not a steak.

Your burger still looks like a mess - undercooked on the outside, overcooked on the crumbly inside. Time to step up to a hot cast iron and learn to smash a burger for a crust.

simply untrue in fact i would say that particular burger was undercooked on the inside. how could you even tell how cooked the inside is anyway? Furthermore, wouldn't smashing the burger just make the burger less juicy and therefore taste worse? Unless you mean smash it thin beforehand, in which case I don't like thin burgers. They overcook too quickly. I don't have a cast iron but I do have an incredibly heavy pan that I use for the same purpose.

Because it's loosely packed and falling apart.

Basically, no - I'd recommend http://aht.seriouseats.com/the-burger-lab/, who actually did labwork and can go over the exact mechanism.

The flavor of a burger doesn't come from 'juiciness' - it's ground beef, not a steak. You want more fat, you add more fat while grinding. But the good flavor of a burger comes from the crust it makes with the pan/grill, and smashing maximizes that. It's why the best new burger chains (Shake Shack, among others) do two patties.

>still using cisco crinkle cut fries and charging as much as Five Guys fresh potato fries
I and others have made the case that Shake Shack intentionally treats the fries with contempt so as not to draw attention away from the burger, which is the mistake Five guys made - by having their fried be better than the burger people don't rate their burger as highly as they otherwise might. Having your main in any risk of being outshone by the sides is a bad strategy.

Right. But Shake Shack is very likely to source better meat than the average person, which is why their prices don't seem that outrageous to many, regardless of their shitty fries.
