How do you make chili? What's a recipe you always follow?

I'm making chili and I just realized I don't have cumin or chili powder. What can I do besides going out and buying cumin and chili powder?

I think it is a region thing, I'm from California and I don't use beans ever. I can see why some would though it's cheaper with beans and some people like beans a lot.

"Real chili doesn't have beans" is a thing I see a lot around here but I think it depends on the person.

Chile con carne does not traditionally have beans in it, though they were served as a side. Chili became Americanzed as the depression made poorfags, so beans were added as a filler. So non southwestern areas of the us put beans in. But it's like saying a kfc famous bowl is fried chicken - kind of, but not really.

Chili is truly awesome. Every week I make enough for four days, and I make it blazing hot. I portion the batch into nice glass containers and then binge on the chili through the day. Since it's literally painful to eat I never eat more than a spoonful or two at a time. The jolts of pain are also great against depression.

Tomatoes
Cumin
Paprika
Chili powder
Garlic
Red kidney beans

Brown the meat, take it out. Sweat veggies in the fat. Add spices and fry them for a bit. Add a big can of tomatoes and some water. Simmer for awhile, add beans for last half hour or so

Huh. Interesting. I live in the Midwest and we always put beans in chilli. We still use beef, so it's not like it is filler. I think it tastes very good in it, but I guess tastes are subjective not objective. I won't tell you how to make your food if you like it that way.

I make chili a lot but I never do it the same way twice. I always find a better way to do stuff or have limitations or whatever, I'm gonna make some tonight but I've learned to keep it simple.

A lot of people forget masa harina, it adds a nice flavor and thickens it up some.

If adding masa harina make sure to add it as a slurry, if added directly to the hot chili it'll clump up and be a pain in the ass to deal with.
