I always wondered why my mom's cookies were crispy and flat as opposed to chewy and not "fluffy" per-say, Made some myself for the first time, mixing flour "just enough to combine", and they were amazing. Tried the recipe again weeks later, not paying attention to that instruction. Paid the price.
