Happy National Burger Day, guys!

For dinner, I coo/ck/ed a 6 oz burger with bacon, pepper jack cheese, peppadew, spinach, and stone ground mustard on a toasted bun. Also asparagus, canary melon and blueberries.

Because meat is a muscle, on the heat it contracts, which is why you rest a steak. Burgers don't get their shape back if you rest them, but if you make a slightly wider, flatter patty and score the top with a spatula before you season it, it will help maintain its patty shape instead of bubbling up like that. You could also fuck up your burger with a burger weight, but fuck that. Try it next time, you'll be impressed.

Other than shape, that looks like the dankness. I really like the idea of chiffonade romaine instead of a whole leaf.
