One nice recipe is to take a bit of chipotle in adobo sauce and mix it with sour cream.

Crema is... a bit more fluid I guess and depending on how/where you get it or make it, it's a bit more sweet as well. Where I live it's in containers that are more like that kind you would use for a sauce than the short wide containers I see for creme fraiche or sour creme. Crema,though thick, will pour out if you don't want to spoon it out. It's just a bit more tangy than the taste of cream imo, but there are different brands and the taste will go one way or another.
