I'm trying to better myself (health, etc) and so I'm going to try and start cooking for myself a lot more often now. Seasoning a chicken breast from costco with pepper and salt, preparing rice, and cooking eggs is the extent of my knowledge. What are some easy, healthy dishes to start with?
Relatively quick to make, preferably.

Lentils are amazing, but are kind of expensive.

Wild rice, brown rice, black beans, cheese, are your friends.

Making red lentil curry is easy as shit, pretty cheap, really filling, and healthy.

pack of chicken thighs at costco is like $10 or $12 or so depending on weight, it comes with like 8 packs of 3-5 thighs each. shits cash dude.

what ive been doing lately is...
>oven @ 400
>season the shit out of the thighs
>salt, pepper, red pepper flakes, cajon seasoning, olive oil
>make sure to get under the skin
>place on cooking sheet, skin side up
>cook for about 20-30 mins till skin is really crisp.
>either eat it plain like that or shred chicken off bones and put in a salad or something like that
