Cardamom isnt REALLY a specialty spice, its just hard to use. In low concentrations its got an astringent flavor similar to certain notes you find in something like cilantro. When used more modestly it takes on a slightly caustic-spicy flavor, as well as a fantastic depth of herbal and organic flavor. Honestly, to cook indian food, just learn by doing.

Currently cooking pumpkin sauce for tonight's dinner. Five portions, one for tonight and the rest at various points throughout the next week or two.
Want pictures? The initial sauté is already done with. The only things left to do is finish simmering the chunks of pumpkin then mash them up, boil down the mash, salt to taste and stir in some parsley at the end.

Oh, sorry, I'd thought I mentioned but I must have forgotten to: it's for pasta.

The sauce can also be built on to make other dishes. For example, if I blitz the sauce smooth, add vegetable stock (or ham stock) and thicken with roux compounded with a little caraway, stir in some dill and top with a dollop of sour cream, it'd be a type of bisque-like Hungarian pumpkin stew (sütőtökfőzelék).
It's almost time to mash, actually. Another minute or two.
