What they don't seem to realize is that if you make your veggies tasty then you will be willing to have far more of your meal comprised of veggies and far less comprised of meat and fat and whatever else. On the other hand, if you selectively go all-out health freak on your veggies then you will probably be unwilling to have veggies make up more than a small side component of your dish, meaning you fill up on steak and fried potatoes and bread.

I can assure you that most of the chefs who made these dishes were actually cooks, and a souschef evaluates each before it goes out, while, for the most part, the chef whose name is on the sign didn't even glance at the dish, but it is still the result of that chef's hard labors and they will judge it harder than most as far as concept goes, and usually as far as execution goes.

Most counties have cultural offshoots different then the states they are in. most cities have a culture distinct from the county or state, and if the city is big enough that city will have multiple cultural traits indigenous to the neighborhood or burrough (case in point- the five burroughs of NYC are very different from each other, but they're all closer to each other culturally then they are to the rest of the state.).
