man made tile is not really that expensive. That area could be done for around $150. It's obvious since the tile is the same height as the carpet they didn't use any hardy board/cement board under them. So 61 square feet which is what that area is, would cost maybe $50-75 to purchase. Throw down some thin set, place the tiles, grout the next day. Almost no cost to it. Especially since they didn't even need to cut any of the tiles. Although it's hard to tell from photos, it could be a honed travertine and not a man made ceramic/other tile.

Closest I can really get to a shot of my work kitchen right now. You're not missing much. Down the shot, outside of frame is a few prep stations, fry, smoker, etc. Then you've got your bain-marie and butcher's block.

A few space saving things:
Is there room anywhere for a kitchen cart? There are some with great butcher block tops, towel holders and shelving and all that.

Glue some magnets to the bottom of some small jars and put your spices in the jars and stick the jars on the fridge (or just put magnets on the containers your spices are in now and reuse them). Put magnets on lots of other things for the same reason.

It looks like there's lots of wall space: shelves/racks/drawers would be helpful if they fit. Fold-up counters - think a wide board mounted to the wall with a hinge, with hinged legs - can double as an ironing board. If no where else, behind the counter and stove has space for magnetic strips, hooks, or pegboard.
