>boiled rice gruel with chicken and bread in it is a gourmet delicacy
wut

It has literally five (or six) ingredients. Seven (or eight) if you count water and salt:
Rice
Ginger
Scallions
>and/or coriander leaves
Chicken
Bread

That's it.
Boil rice, chicken, scallion whites and ginger.
When rice breaks down into gruel, season to taste and stir in scallion greens.
>and/or coriander leaves
Serve with fried bread sticks.

What's so gourmet about that? How much of a delicacy can something that costs 91¢ per serving be? 71¢ if you don't have it with bread.

My grandmother in New Mexican so she would make this thick green chile stew. It's fricken wonderful with mashed potatoes, shredded cheese, and a touch of salt. It's so nice and comforting every Thanksgiving and Christmas

I'm not OP, just some guy who eats also eats jok.
It's cheap, good, easy to make, very customisable and [can be] quite nutritious. It's a staple food. I don't see how it could be considered 'gourmet' or 'a delicacy' when it's literally gruel.
