I bought some stir fry sauce from the store last thursday or friday and used it a couple times over the weekend. I just read that it says "refrigerate after opening."

Do you think it's okay or should I throw it out. It smells kinda strong but I think that's just how it smells. It doesn't smell rotten or anything

I did that with beef broth a few years ago when I first got my own place.

I didn't die or anything even though I used it over 14 days later stored in the cabinet. Didn't go rotten, just lost flavor as time went.

Now I know not to buy the big containers.

Sugar works about as well as salt for preservation, lowers the water activity level. Salt and sugar make the water content unusable for bacterial growth.
