roasted red pepper might be available amongst the pickled options at the supermarket even if pimentos are not specifically there.

I use pimento stuffed olives instead of just pimentos. But, check the canned/jarred vegetable section of your supermarket. They may have jarred diced pimemtos like we can get here, but idk.
