Is this guy actually good or is it just a meme?

He's a decent chef but was one of the first to sell out for a TV persona so he's widely considered a joke by people who don't know what they're talking about. If you go to his restaurants in Louisiana you can still get a pretty good meal

I've used a couple of his cookbooks, and the recipes come out well. He's not as traditional as other Cajun Creole cooks, but the food is still good.

what kills me is how mario batali became a neutered women's daytime talkshow side attraction

Technically he's probably really good and the first two tv shows that he did were also really good. They were 1/2 hour ones with a focus on teaching people about techniques and skills. His hour show once he became a showman was ridiculous.

Weird camera stuff, stupid music, why does a cooking show need a band? And stupid shit like BAM!

... plus a studio audence. Why does a cooking show need a studio audience to clap like morons everytime Emeril chops a garlic clove? The hour show was pure idocy.

I tend to think that if you go to just about any place in NO you can a decent meal and not get ripped off for it because "tv personality."

>> No.6762743

It's pretty sad that people exist that plan a year or two ahead just to go to a restraunt owned by a tv personality who isn't going to cook for them.

Met him when I was younger at one of his locations, super humble guy and the opposite of faggot pretentious homo foodies and self proclaimed political carnivores that have taken over cooking and brewing since 2005

>emeril glances at his butter dish
>a few hushed gasps are heard through the audience
>emeril glances up at the audience
>the audience is audibly squirming and huffing through their noses
>grabs a knob of butter without breaking eye contact with the camera
>throws it in the pan
>BAM!
>the audience erupts into a sensual roar. midwestern tourists are falling over themselves at the prospect of using such a rich ingredient instead of pam. the crowd folds in on itself in a fit of sexual urgency as emeril leers over his range, letting the steam curl around his formidable eyebrows.

He's the only American chef I can stand to watch for more than 5 minutes.

Well said. I think that all of those shows have some kind of "playbook" and that would be right out of Emeril's.

I'm trying to think of something he's done that has really improved food culture. Besides have a few decent places, maybe helping to popularize it a little more, I can't think of anything, and if there was any popularizing going on, I doubt any of it was really getting people interested in cooking. They just wanted to watch him shill his spice blends and cookware while yelling BAM! >>6762645
>giada can eat a fat cock.
I'm pretty sure that's the main reason she gets ratings.
>>6762771
It's one gimmick or another. At least hipster gimmicks tend to have something more related to the food than anything else, but you're right. I miss the days before food network and reality TV existed.

Not that it's all bad. There's still plenty of good food out there that isn't all trend and gimmick, it's just that all of the trendiness and gimmicks get so much more attention and it's harder to avoid.

He used to be good, but a steady diet of shitty high fat foods have aged him before his time. I was watching some of his more recent stuff and it was like watching an octogenarian shuffling about the kitchen. Thing is, he's not that old.

His restaurants suck for anything beyong appetizers. Because his days as a chef are behind him. Now he just runs an empire based on a brand.

The recipes and cooking knowledge he used to give away for free in the early days because he was a talented chef who wanted to break through into the more lucrative world of television are priceless. Same is true for Batili.

he's rubbish
Every recipe has a zillion ingredients just because as an elite chef he needs to portray himself as more sophisticated than the usual punter
