Hijacking thread slightly to ask about making homemade ginger ale. I have a huge box of cheap instant ginger tea from when I was sick a while back. It looks like powdered or crystalized ginger formed into small pellets. The ingredients are only honey and ginger. It's very spicy and not that sweet.

Would this be okay to somehow turn into a syrup to add to carbonated water? It's a big box and it's taking up a lot of space.

It's my favorite soda of all time. It's not sold in bottles or cans here because Dr. Pepper is so popular, and it's a shame. The only places I can get it that aren't hole in the walls are Wendy's and Del Taco.

So I tried it.
I attempted a "syrup" using a small amount of water and a packet of the ginger (strong enough for 2-3 cups) with some sweetener. I think I put the flame a little too high cause it started to smell kinda burnt like caramel before I shut it off. Tasted a bit and it seemed fine so I went ahead. I added juice from a lemon (it's in most recipes) and poured it into a 1liter bottle.
It tastes.... Odd to say the least. Not sure what to make of it. It tastes like ginger, but not ginger ale. Next time I might need to use two packets, though. This one came out a little weak, expected the lemon to help add flavor.

Actually, after sipping it a bit more I caught a mouthful that had more lemon flavor and it tastes way closer to gingerale. I was scared of it being too lemony since I don't associate gingerale with a lemon flavor. So next time I'll add more.

I tried this and it's pretty terrible. I mean as far as soda's go it's not the worst, but to me, at least, there's a very artificial element to it, and to have to say that in regards to a soda is really saying something. That said, I know there's much to be said about growing up with your favorite soda. Some people just grew up with shittier sodas than other people, I guess.
