Chef John has a pretty good recipe for pancakes. Alternatively, for buttermilk pancakes that are much fluffier, I use this:

2 cups all-purpose flour
1/4 cup sugar
21/4 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
2 cups buttermilk
1/4 cup melted unsalted butter, plus some for frying

Sift the flour, combine all the wet and dry separately and then add the wet to the dry, mix for a bit (I use a wooden spoon over a whisk as it is pretty thick). Also, that will make like, 16 pancakes, I always half it and that is plenty for 2 people
