My middle school used to serve this awesome chili it had a different textured meat in it that was pretty good. It was like little small flat slices of meat. Other than that it tasted about like wolf chili. I stopped eating it when I noticed the lunch people tasting the chili but it was good.

I like making a more Hispanic version.

>cumin
>oregano

>onion + garlic, cook down
>reconstituted chilies
>whole peeled tomatoes
>black+pinto+cannelini or kidney beans
>cook down until meat is tender enough to shred and liquid has reduced and thickened

Garnish with fresh corn cut off the cob (raw), fresh jalapeños, cilantro and lime.
Eat over rice or with tortilla chips.

Keep your cheese and sour cream away unless you're a pussy and can't handle heat.
If you must have cheese, have a Mexican cheese, not shredded cheddar.

I used to make chili for my friends all the time but now I pretty much only make it for the Super Bowl. They and I always thought my chili was fucking great but I recently have been getting a bit weary of how Italian influenced it is and I recently made it in more of a Mexican style with short ribs and lots of mild dried chillies and it was fucking great. I might start making it more again. I still think it's way better when you thicken by reduction and finish with sherry vinegar or lime juice and fresh herbs and peppers and shit though

First, I am not from Texas. I don't particularly like it in Texas. It's hot there, and everything wants to stab or eat you.

Having said that. It is true that their one-bite chilli concept is, 1. Elitist, 2.Jingoistic at the state level, 3. Unnecessarily difficult.

It also has produced some of the best chilli in the world. Smoked paprika? I would never have thought of smoked paprika. Morel oil. Green mole with whipped plantains.

They may be as insufferable as vegans, but they make some kick ass chilli.
