It's because they take advantage of the resources they have that a deli lacks. Guaranteed fresh ingrediants. Spinach looking a little sad and droopy? They chuck it and run to the produce area and grab a fresh bag. The meats and cheeses are sliced right there in front of you. Being a full grocery store, you have far more options.

It absolutely is not comparable to Wawa or Sheetz. You can bring up the family owned delis all you want, but you're getting the same from a large chain all over the place in the SE.
