how do you make it /co/?
I've had a strong desire for some fried catfish or red snapper, but I'm not at all skilled in fried food; especially not like this.

Any recipes you have? tips? recommendations on the fish?
All i have around the house right now is some salmon fillets

Milk, eggs, garlic/onion powder, cayenne, hot sauce in a bowl. Whisk.
Grab a box of fish fry. Add a little cayenne if you want. Fry it like you would anything else. Oil at 350-375, take it out when it looks nice. Remember it will continue to cook a wee bit after being removed from grease. Southern Louisiana born and raised. Sorry I have no measurements...you just kinda..know.

But I'm going to make this tonight, but I'm going to add a little jalapeno powder to this and eat it with fresh cut limes because I can't seem to eat anything without turning it filthy-mexi-style.
Also, I think I'll be making jalapeno tartar sauce.
I was looking into remoulade but I seems like it might take effort.

Coat the fish evenly with the salt and pepper. Toss in the corn meal and flour. Fry until crispy.

Feel free to do whatever with it. If it's good, make it. My family is majorly cajun. We just cook. Measurements and firm recipes are for baking mostly.
