I'm not vegetarian, but about two-thirds of what I eat is vegetarian friendly and about two-thirds of /that/ is vegan friendly (so nearly half of all my food is vegan, I guess).

For dinner last night, I had pasta with cauliflower, a typical Neapolitan meal.

For the condiment:
Olive oil, 80ml
Garlic, lightly crushed but otherwise intact,
4-6 cloves
Cauliflower, cleaned and cut, about 500-600g (1-1⅓lbs)
Tomato juice, a third to a half cup
Water, as necessary
Salt or stock cube/powder, to taste

Put oil and garlic in a pan and set to high heat.
When garlic has started to blond, add cauliflower and (carefully) the tomato juice.
Sauté until tomato juice has reduced and cauliflower is red all over.
Add water to barely cover and simmer, relatively undisturbed, until liquid is reduced and cauliflower is cooked through.
Season to taste and set aside.

For the dish:
Cauliflower cooked as above, two-thirds to three-quarters of a cup
Water, two cups
Salt, as needed
Spoonable but not tiny-as-fuck pasta such as tubetti/tubettini, conchigliette and the like or, alternately, linguine, spaghetti or other long pastas broken to size, 75g dry
Extra boiling water, if/as necessary (likely not)
Grated cheese, such as parmigiano, to serve

Combine cauliflower and water in a pan and set to high heat.
Add just a little less salt as you think you might like in your finished dish.
When it boils, add pasta.
Boil, stirring from time to time, about seven minutes.
Off the heat and cover the pot for about 1 minutes.
Adjust salt to taste, if necessary and serve up, topped with grated cheese.

Lots of Neapolitan homecooking is simple like this but surprisingly flavourful and vegetarian or vegan friendly.
The odd thing, I've noticed a lot of similarities between South Asian cuisines and Neapolitan cuisine IE we start with a frying stage to flavour the cooking fat then boil to make a condiment for the starch. The difference is the fat used and the flavourings.

I saw that "roast a whole cauliflower" thing online and got on that

-1 cup labneh kefir cheese (i still do dairy)

1. preheat oven to 400, grease a cookie sheet
2. mix all ingredients except cauliflower (i honestly just eyeballed the spices, and tasted as I went)
3. Pour mixture onto cauliflower head. Lather that shit all over.
4. bake for 30-40 minutes
