I see the coarse salt is on the side.
Usually we'd place it on the opening of the bone prior to broiling.

Also nowadays I tend to prefer horizontally sliced bones, it makes it easier to pick and ensures a more even cooking.

Wouldn't call it the greatest dish but it sure is a delicacy that I enjoy once in a while.

Rye bread is one of the best contrasting things about the reuben. Those latkes should be an appetizer, imho.

OP, I love the Ray's Hellburger in DC that offers an optional topping of bone marrow and persillade on top of the burger. To me, that's the best of both, and the juice is amazing!

For a perfect sandwich, I'd also go with a cuban, specifically the croqueta preparada, and the bread must be authentic and toasted with garlic butter in the press too. A close second, to me, would be a place in S. Miami called Whisk, that has a BLgT on homemade toasted bread that features pimento cheese for the mayo element, and fried green tomatoes for the T. Has thick peppery homemade smoked bacon too. Perfection that is craveable like the cuban or rueben.

I've met a few offline in Miami. They were WoW friends, believe it or not.
