I was having dinner at a fancy restaurant called "Bridges" with my partner and her three kids for her birthday, along with their elderly lady nanny.

I decided to order the jambalaya but I asked the waiter to make mine not spicy (because I'm allergic to pepper). The food arrived quickly and it looked terrific but as soon as I took the first bite I started to cough, then began to choke. To my horror I realized that the jambalaya had pepper in it - a LOT of pepper. The choking got worse and I couldn't breathe but then the nanny came running over yelling

"Help is on the way dear!"

She got into position behind me and started to firmly give me the heimlich maneuver. After what felt like forever a piece of shrimp flew out of my throat and suddenly I could breathe again. I turn to thank her for saving my life but I froze when I saw that her "face" was a prosthetic and had peeled off. My date's nanny was a MAN!

Canlis in Seattle. It was pretty good. I had the wagyu steak and I think it was a tuna carpaccio appetizer. Our waiter was very formal and basically had a huge stick up his ass.

Also the way they serve bread is by using two forks kinda like chopsticks and put it on your plate and the guy who did it for our table was struggling a lot with it so an older gentleman had to swoop in and do it for him. I felt bad for him.

Just ate at Boka here in chicago a couple of months ago. Three star michelin rated and it was totally worth it. Bill was about $500 for the 3 of us, but the service was seriously impeccable. Never had service that fine before.

We have a reservation at girl and the goat, also in chicago, but that's in September because reservations are typically 3 months in advance.

The last one we want to go to in chicago is the aviary. It's something like $250/head, not including wine, but it's like a 16 course meal served over 3-4 hours.

Anyone here ever worked FOH at a high-end restaurant? Was it hard to get the job your first time working at one? I'm moving to a different city with more dining options soon and I'm thinking of applying at a few. 7 years' serving experience but all at mid-range places. Is it terribly stressful?

>> No.6679479

Haven't been to little goat either. The wait for girl and the goat didn't used to be so long, right when they opened. In retrospect, we really should have gone then.

We are usually dining in a party of 3, which may add some time to that reservation, but I would still expect a solid 2 month wait if you are dining with an even number of people.

It would be acceptable to eat at alenia without drinking wine, I just don't know why you would. Don't forget you can expect to be eating for several hours, so a little wine might help. On the other hand, some people are allergic to tannins, or just don't drink, so I'm sure it has happened before, and I'm positive that the staff would make you feel absolutely comfortable in that scenario.

Good point about wine and the duration of the meal. I do drink and but my assumption was that a wine pairing could potential double to price of the meal but after some internet search it doesn't seem to be the case (at Alinea at least).

Yah, a good rule of thumb is that wine at a restaurant will run you between 2x and 5x what the same bottle will run you at the liquor store. Good restaurants tent towards the 2x-3x area.

So you might expect the $250 for a seat at the table plus, assuming 1 bottle of wine per person (just 1 for yourself) around $40-$85 for a reasonable bottle, puts you at ~$320 + 20% tip lands you at a total of around $385 per person.

Hence why we are saving this for a very special occasion. Even if it's just me and my girl, that's still around $700.

At a place like alenia, you can tip 15% and not feel bad about it, considering the price. I usually tend towards the heavier side of tipping though.

Don't be afraid to stick to table wine too. There is no shame in a cheap bottle of wine at a restaurant like that. Many a time I have errd on the side of a classier, fuller bodied, more expensive wine and regretted it later. Not because it wasn't good, it was just more than necessary.

If you are going to do 2 bottles, say between you and someone else, go for a cheap bottle up front and get the better bottle second.

I'm telling you though, if you want something more affordable, we went to Boka, a 1 star michelin restaurant, where we had 3 people eat well, got 2 bottles of wine at ~$75/each, got desserts, a brandy and 2 coffees, all for just about exactly $500 including tip. It was way more affordable than alenia and was still probably the classiest dinner I've ever had. The service was in-fucking-peckable.

Never, ever start with a cheap bottle and end with an expensive one. That's completely backwards. You want to appreciate the tastes and complexities of a fine wine. You absolutely cannot do that if you just downed a shitty bottle of house wine.

It all depends on what you get/how much you want to eat. My parents and I went there last night and originally spent about 135 on their combos, but our bill ramped up to 220 after tax and tip after we decided we wanted more rolls. Hard to say it wasn't worth it, though.

> shitty bottle of house wine

At places like this, there is no shitty bottle of house wine. I understand what you're saying, and I totally agree in a case like drinking a sour beer first, but unless you're sneaking in a bottle of mad dog, nothing there is going to fry your pallet.

Moreover, if you drink the good bottle first, you're likely to go through it faster and be left slowly sipping on the lesser bottle. Get the lesser bottle first to get you going, then savor the good one later. In my opinion atleast.

Probably Bestia in LA. Haven't tried any of the Michelin rated places in the area.

When I was a kid (~15 years ago) my parents took me to this fancy korean restaurant in DC. It had one of those aquarium glass floors with fish swimming underneath. We were seated in our own room on cushions on the floor with one of those low tables. Wish I knew the name of the place, or if it even still exists.

I had the same reaction. I was shocked. I had a better seafood meal at Nobu across town. 3M stars? Ripert must give a heckuva blerjerb.

To answer the OP: Any 3 M star I've been to in NY not counting Le Bernadin. So Per Se, Daniel, 11 Madison. I guess RGR in it's 2 star hayday.

I'm a different anon, but it's not just a weeb thing about trying to seem "authentic". Actual legit wasabi can only be grown in a few parts of the world, so most "wasabi" sold in the west is just artificially colored horseradish. It's a completely different item made from a completely different plant.

>> No.6684919

Well, I mean it's not just an authenticity issue, it's a completely different product. Like, when people buy sparkling wine from anywhere other than Champagne, France, and people bitch about it being called Champagne even though it's objectively the same drink, that's an authenticity issue and people who think it matters deserve to be made fun of. The difference between wasabi made from real wasabi as opposed to "wasabi" made from regular horseradish actually matters and I don't think anon has to be a weeb to care about the difference.

Wasabi takes a lot to grow and its expensive.
Maybe if you had a good place to grow wasabi you could grow it yourself but theres still the time factor.
People would rather just use horseradish
