I've always loved salt. From a very young age salt was a huge part of my life. I've sampled hundreds of varieties, from typical table salt to $50 a gram artisinal offerings.
I have fond memories of my mother at the dinner table, reaching over my shoulder to sprinkle a smoked alderwood finishing salt on my slow cooked beef roast. She would always set the table with at least three or four different saline options.
She would salt my scrambled eggs with a gold flake Welsh sea salt, grind a black volcanic Hawaiian over my buttered grits, accentuate my macaroni and cheese with a Prussian blue coarse ground varietal.
My mother would make dishes go from fucked to fabulous with the twist of her wrist. She truly was the salt of the Earth.
She took saline cooking far beyond serving oysters on beds of rock salt or baking a salmon on a slab of Himalayan pink sea salt. She made salt the feature presentation.
I miss her salty kisses. I miss her briny smell. I wish she was still here. All I have left is this.
