someone explain this magic to me?
is this a bunch of perfectly made fluffy pancakes layers or fuckload of thin spongecake layers with white cream inbetween?

It looks more like meringue with custard to me, but it could be crepes.
It's hard to tell from that picture.
The reason I say meringue, is because of how the back side looks. It looks like it was formed up the side of a pan, spread thin on the bottom, thin layer of custard or crepe, meringue, custard/crepe, repeat
Then the top edge laid, lightly broiled or torched, then beveled off with a knife (probably dipped in hot water).

Looks like a stefanka or similar torte to me. I've made it before, time consuming, super rich, kinda worth it. Takes a couple pounds of butter. You flip a baking pan upside down and grease it well, brush a thin layer of batter on it and bake for like three minutes. Alternate with layers of really rich filling (where all the butter comes in). Cover in a sugar glaze that hardens.
