I wanna be a good boyfriend and surprise my girlfriend and friends on July fourth with some BBQ ribs. What's the best way to go about making ribs. Pork ribs or beef? Dry rub or wet? Your favorite recipes?

Also sadly I will be cooking on a gas grill not charcoal. She doesn't have charcoal grill.

Hopefully, whatever rib you decide...they will be smoked.

For pork ribs, I like a dry rub with a homemade bbq sauce on the side. (Anything from a honey bbq to a hoisin cherry, Asian bbq sauce)

For beef ribs, I have always love an orange sauce.

I hate to sound like an asshat, but I sous vide mine with a rub and a little vegetable oil. I did this then finished it on the grill to get a nice crust on it. It turned out phenomenal.

Smoking the the ribs is a great idea, i highly recommend. Brining and a slow Smoking 5-6hours.
If 4th of july is your theme pick rack of ribs st louis cut.
And make your own rub. If not use alton browns recipe.

Baby back pork ribs can be cooked quite easily on gas.

Look up how to get smoke flavor by using wood chips in a bag of foil with some water.

Use a decent sauce, or no sauce at all and just use a good memphis rub.

If you need a good sauce, look up a recipe or buy you some Stubb's.

Do not buy Sweet Baby Gay's, or Hunts, KC masterpiece - fuck all that shit.

Let's make this clear: do a dry brine. Don't make a liquid brine and soak the ribs in that.

Just coat them with salt and let it sit overnight.

Fuck wet brining, all he needs to do is put a nice rub on it the night before.

Also, he needs to do baby backs as spares take forever, and babys you can basically just grill and they'll come out great. Spares require low and slow.

How do I make my ribs really tender (so the meat almost falls off the bones) ? I cooked them in water for almost an hour and then put them on the bbq with my home made honey bbq sauce brushed on and it was nowhere near as tender as the ribs I'm used to ordering at takeout.
