Does this dude know his shit, or is he like all the other food channel losers who can't cook good food even with off camera chefs helping?

I want to make some ribs but I have no grill or smoker and his oven recipe seems good, but I'm leery.

I've tried a few of his recipes, and I wasn't impressed. YMMV.

His show is based on Harold McGee's On Food & Cooking. It's more or less an adaptation of that material.

Alton has said time and time again that he's not a cook, but a filmmaker. That's why all his shows have references to film. He did the cooking show because he wanted to get into film making and nobody else was explaining the science behind cooking on television in an entertaining way. Nowadays he's like a Gallagher/Bill Nye act touring the country and putting on a cooking extravaganza.

As for doing ribs in the oven, go for it. The flavor is going to come all from the sauce, so pick a sauce you really, really enjoy.

If youre an amateur or just starting out his show can be really helpful. But if youve gone to school for cooking or have been doing it a long time then you might see some holes in his teachings/etc.

Any recipe ive used from him though has been good/great.

apply dry rub generously.

wrap up in plastic cling film

3-4 hours in the oven at 250 degrees Fahrenheit. plastic wrap won't melt at this temp.

remove from wrap. apply sauce. back in the oven under high broiler for 5 minutes or so.

rest a few minutes

I'd go for five or six hours at 230F, depending on the rib. Also, I wouldn't put sauce right on the rib - I'd just slather a mix of salt, brown sugar, and black pepper all over them - sometimes I put in chili flakes and garlic powder as well.

I definitely have tried new things just from watching his show. He got me into sardines, avocados, corning beef, smoking meats and really just trying new ingredients here and there. You may have different preferences though.

pic related, doesn't look appetizing at first, but the first bite was heaven and I've been trying different things ever since. Nowadays I like my sardines with hot sauce, bit of brown mustard, squeeze of lemon, all on a buttery round cracker.

Some of his stuff is way too complicated, like the ladder rig for deep frying a turkey or making chicken wings without a deep fryer. Other than that i still use alot of his techniques and recipes i learned when i was a wee little chef babby watching him on tv. I did the ribs like in his video during the winter when i couldn't use my smoker, and they turned out almost as good as the real deal.

I also happened to meet him a few times because i worked in a grocery store in georgia where he went to alot, and he's actually a pretty nice guy.
