My mom has made traditional Peruvian dishes my whole life.

That being said if you haven't tried Tallarines Verdes con Bistek, also known as Tallarin Verde a lo Pobre, you haven't lived. If you want to know really hidden gems among actual peruvians though, there's something called "Chifa", which are what the asian immigrants created when they moved to Peru. It's basically Peruvian version of Chinese food. It's incredibly delicious, and if anyone lives in or around NYC, go to Queens and look up a restaurant called "Chifa" on Northern Boulevard. Their soup uses some boiled quail eggs that are incredibly good. And they serve authentic stuff.

My family is from northern Peru (around the Lambayeque area) and I just cringe when people think that Peruvian food is only food served in the capital.

What the fuck is up with Peruvian restaurants sprouting up everywhere? Growing up, we drove hours to the nearest (decent) Peruvian restaurant. Now, there no less than 15 Peruvian places in that metro area, and I wouldn't be caught dead calling it a big city.

Another big trend in Peruvian food is turning everything into tapas.

My knowledge of Peruvian cuisine is mainly limited to coastal stuff. I've had some delicious Pachamanca in Lima and had no clue what was in it. But yeah man, some cau cau or mondongito al italiano, a good seco or cabrito de leche, un pescado a lo macho (criollo, no cream sauce pls), un chupe de camarones, and that fucking salsa verde slathered on everything.

I have an almost Pavlovian response when I hear Peruvian folk music, it makes my mouth water. The only time I'd hear it is in big family gatherings or in a restaurant.
