Homemade bleu cheese salad dressing.

I used to work at a quality pizza joint that made its own bleu cheese dressing. We melted the cheese in a 4x4 on top of the oven, then mixed in stuff like buttermilk and mayo and the like. Shit was grand.

Any suggestions before I stumble into trying to recreate / make my own?

It gets a different kind of mold which smells and tastes terrible. Happened to me recently. It smelled differently but I wasn't sure if it was bad so I tried a bit. Trust me, you'll notice the difference.

The mold falls off and it turns into American cheese.

Melt equal parts blue cheese and yoghurt in a pan, add a little water to thin it out.

Hit it with a blender, with some dijon mustard, sherry vinegar and a boiled egg (or a few if you're making a larger batch).

Emulsify with vegetable oil and season then you're set.

skip the onion and only use the buttermilk to thin as necessary, but I like it thick like a dipping sauce. Seriously I love this recipe
