I've made these a few times using Chef John's recipe and they turn out quite nice. I've found they work with basically any cut of beef and any random selection of root vegetables, but a lot of onion makes them the richest, since they caramelize a bit.

Looks to me like your dough was far too dry or something, which probably made them harder to shape (hence mild ugliness) and also made them crack when baking. Did you egg wash?
