Thinking about making carnitas for the 4th and looked around for recipes, seasoning options and stuff. The seasonings change a little bit with the use of oranges, cinnamon sticks different types of chili powder and stuff but the technique is kind of varied.

V1: stove top method of just throwing everything into a heavy pot with some liquid (coke, juice ect) and set it to boil then reduce to a simmer and cook until the fat is liquidyish then boil uncovered until everything evaporates and meat is brown

V2: same stove top method as above but once at a simmer put in a low heat oven for a few hours, set under a broiler with some of the reduced cooking juices to get crispy then shred the meat

V3: everything in the oven and once tender shred, then broil until crispy

V4: cut up the meat first, season then brown the meat, stick it in a low oven with the rest of the seasonings and liquids uncovered until tender, once cooled shred and put back in the oven to get crispy

I used that recipe that another anon linked and didn't tweak it. There's also a lime in there. I ended up really loving the flavor in them, but next time I think I will add some cumin. I don't see how chili would hurt it if you're looking for a little heat.

cumin and chili powder aren't necessary if you have good salsa, preferably two, one red one green.

make sure you have chopped onion mixed with cilantro; lime wedges; and sliced radishes for garnishing.

I did carnitas a few weeks ago. All I did was oil poach some pork, no seasoning no nothing. I let it get super tender, seasoned it, and put it under the broiler to crisp one side. Best carnitas I have ever had. Sod off if you care about being traditional.

not everyone does the radishes, but I always like it when it's available. it adds a nice textural contrast, kind of like cabbage does in a fish taco.

S&P. If you wanna get adventurous try some cumin, garlic, whatever else you might want. The pork comes out perfectly and assuming, you have decent enough pork, shuld taste just fine. Let your toppings do the work, green salsa, avocado, pico, whatever you may want. In my opinion it's much better to under season something if it will be topped with other things.

I'm a simple person I guess. The restaurants will give you pico, salsa, (red only for some reason) avocado, onion/cilantro but the trucks since they're smaller its always just the onions and cilantro mix and one or both green and red salsa.

Do you live bear a WinCo? They have The Best pre-seasoned carnitas. And I live in an area with a lot of hispanic markets. Their Carne is stellar too. Don't waste your time trying to do it yourself. Get the preseason meat from WinCo, stick it in the slow-cooker, and focus on other things.

I'm Mexican and you're really under estimating the access of bottled condiments in Mexican cuisine. we love to add mayo, ketchup, soy sauce, coke and worcestershire sauce in our foods

Just google carnitas con coca cola and you'll get a bunch of results. The most basic of carnitas preparations will call for just for its own juices like in michoacan but some places add milk , condensed milk etc etc. Just like mole verde throughout Mexico varies, such as adding hoja santa instead of lettuce, avocado leaves instead of bay leaves and parsley for cilantro.
