Eh, it's not horrible. Only 3 tablespoons of cream is fine. At least it appears that the egg is being tempered by the residual heat, rather than straight cooked.

The way I do it:
>cook bacon in large pan
>remove bacon, leave grease in
>carmelize onions and garlic in bacon grease.
>pour majority of bacon grease out
>turn heat to high
>as soon as it starts to smoke, pour in a cup of dry white wine and scrape delicious bits off of pan (YOUR PAIN SHOULD BE STAINLESS, NOT NON-STICK)
>pour in cup of chicken stock
>put bacon and onion and garlic back in
>let reduce
>drain pasta and put back into large pot, no more direct heat
>pour in raw eggs, parm, parsley
>pour sauce over and mix it all up

Guys, I'm from San Antonio, home of Tex-Mex. Let me tell you: The pictures don't matter. All the legit Mexican restaurants have menus that look like that. My favorite Mexican place looks sketchy as fuck (it used to be a 7-11) but the food is great. It also has this weird painting of Jesus and Mother Mary watching over the Restaurant. I shit you not.
