So, I made some plain bagels. And, while the consistency and everything is right...the taste is just boring. I did bump the salt up a little bit from the recipe I used, but goddamn. What a boring bagel. I want to keep the flavors neutral-ish because I'm going to be using it with cream cheese, cured salmon, pickled red onions and capers. But I want the bagel to be good on its own, too.

Any tips?

It shouldn't just taste like plain ass bread. Though, when I tested it, it wasn't toasted or buttered.

Gotta ferment more. Shape em then fridge them overnight and bake in the morning.

Thanks, I'll give that a shot. I should say I let the dough rise for about 5 hours.
