Here in West Hartford, at a place called Max Burger, they have a "Kobe beef" burger on the menu. It's like $20 or something if I remember correctly. I have no clue if it's actual Kobe beef, though.

That's fucking stupid. Why would anyone grind it up? The point of it is that it's soft and buttery without any tenderisation, mechanical or otherwise. It's a waste to run it through the meat grinder.
It'd be both tastier and cheaper to grind up lean beef and cold-smoked fat (pork or beef or whathaveyou) to mix together. I guarantee that the burger was devised specifically to prey on stupid people's propernsity to spend money on things they don't understand.

Probably not. Most "Kobe beef" sold outside Japan is just regular beef from domestic wagyu cows. The real stuff is only imported in small quantities and would have cost you far more.

I've had Wagyu often, but proper Kobe only once. Tiny restaurant in a bar in Busan, thinly sliced, and served as carpaccio. Taste was incomparable to anything I've ever had.

Snake river farms is the steak supplier to the restaurant I work at. They raise "American Wagyu" wagyu cows that have been bred with angus cows. The marbling isn't quite as well distributed/dispersed as cuts you'll see of pure wagyu cows but it's still pretty sexy.

I've had true wagyu from kobe island at a sushi place who's owner is originally from japan. They served it raw on sushi rice.

Pic related, it's the rib steak cut. Basically the center of the prime rib.

It's possible, sure, but it's overwhelming and not that great (also very pricey). It would be like making a steak out of pork belly. Cut thin, lightly smoked, that sort of stuff is good. Slow cooked with some acid would taste good, but then you would be destroying the characteristics of the meat that you paid out the nose for.

In Japan a few times while traveling on business. The stuff is super rich because it's as much delicious fat as meat, but instead of being meat with chunks of fat the fat is evenly (and heavily) distributed throughout the meat. Eating an American sized serving of it would be insane. A small American serving is more than enough for two (or more).

Those trips ruined me for bullshit versions of many foods. I'd rather have no sushi, steak, ramen or Korean BBQ than eat second rate examples. But they made me appreciate how good we have it for other things, like Italian food, because holy shit do they fuck that shit up in Japan.

Wagyu beef is nothing special. It literally means Japanese beef. Its sold in every single grocery store in Japan and Japanese prefer more marbling than Americans. I usually cook steak once a week and eat wagyu about once a month since its more expensive than the Aussie and American beef at the stores. Its better but not that much better it also cooks much faster and japanese like their steak cuts thin so its a little difficult to cook to the right temp.

Never had kobe although I heard matsuzaka is actually better.
