risotto takes 30 minuets if you are starting from scratch.

now you can cook a whole bunch halfway and finish cooking in it meal sized portions later. Though that always makes the risotto over cooked.

It starts in butter and then you add stock and add stock and add stock until the flavour is in the grain. Then you choose the moisture of the risotto. Is this not how you do it?

Risotto starts with your onions and garlic or whatever varient of shallots, leeks and mirepoix/mushrooms you choose, you sweat that off, add your rice, add your stock(1L stock=150g rice), cook it until it is cooked through, add your butter, add your herbs and cheese and thats that.

If its ever dry, its wrong. The soupy looking rice is concentrated stock with properly emulsed butter and cheese, if its watery, its wrong.

Risotto should be rich and moist, if its not its wrong. There is literally no arguement you faggots can make, this is how its supposed to be made and if anyone tells you otherwise theyre experience cooking is probably from a chain restaurant in middle america like applebees.
