There's a good eats episode about omelettes, watch that it's pretty good.

What you need to do is get about half a cup of delicious steel cut oats and put them in a pot on the stove. Pour in about a cup of water and a splash of milk and bring to the boil on high heat, then simmer for about ten minutes. Dice up a banana while you wait and add it to the omelet mixture to cook that delicious banana a bit which will release it's sugars and make it sweeter. When cooked, transfer the omelet to a bowl and add some blueberries and pre-soaked chia seeds (optional). Then enjoy your omelet. Thank me later.

google the julia childs omelette youtube episode

it's a great introduction, but will take a few times of practice to get it right. you will also need a decent omelette pan so you can fold it easily

reminder that after you pour the eggs into the pan, it should really only take around 30 secs for your omelette to be done and read to take out of the pan

Shit, I've been doing it wrong.
I cook the eggs covered over low heat and leave it until the whole thing is solid enough to flip.

i cannot second this post strongly enough
childs actually teaches a viewer how to cook
you'll learn more in that 30mins 'eggs' episode that you will from watching 2 years of Food Network

if you're making a frittata or spanish omlette, then go for low and slow, to cook through the thickness of egg gradually
but for a simple 2-egg omelette, the pan needs to be so hot that it's enough to be just browing the butter

I have a basic non stick frying pan and a cast iron skillet. Either good enough? Also, if I use the cast iron, should I do it on lower heat?

put your penis in this:

you only need to watch the first 7mins
and use the non-stick, otherwise you'll never get it out the pan neatly
