i use more water than suggested to dilute the broth and don't use all the broth in the final dish. that's just me though, i'm paranoid about my sodium intake when it comes to instant ramen.

I think most is in the "broth" which is mostly MSG
(which has way less sodium than common salt and glutamate is the main product of breaking down proteins)
