I ran a marathon yesterday, for the training and buildup for the actual event I tried to maintain a 3K calorie diet with at least 60% carbs in the weeks leading up.

I had an issue with nutrition and hitting the wall...ended up with a 3.500 calorie day before the race that included 485 grams of carbs.

1) they go bad quickly
2) they're hard to cook
3) the easiest way to cook them is awful (wash them off, pierce them a few times with a pronged fork, microwave)

the body much prefers to turn sugars into glycogen, a watery substance used by muscles as fuel. The body can store 2000 calories of glycogen. Turning carbs into fat is not very efficient.
