Im following a recipe because I dont know how to fucking make this dish, why isnt the fucking writer given exact directions based on measured time, temperature and mass of ingredients?

Because most ingredients are natural products that vary in flavor and consistency. It's retarded to use exact amounts of seasonings, etc, because the flavor of those seasonings aren't consistent. Suppose you have a recipe calling for 1 teaspoon of chili powder. If your chili powder was made from milder peppers, or it's old and therefore lost a lot of flavor then 1 tsp might be nowhere near enough. On the other hand, if you have some good fresh stuff then 1 tsp may well be too much. Likewise meat takes different amounts of time to cook based on how old the animal was, what cut of meat you have, how thick it is, whether or not it's bone-in, and so on.

You're supposed to use your senses to pay attention to the cooking process and adjust accordingly.
