OP here, i eat the legs, and toss the shells aside. in retrospect, it would've worked out better had I de-shelled them to make for cleaner eating, but since i'm foreveralone, i didn't care QUITE as much.

They were de-veined when I bought them. You can see from the pics of them in the pan that there was no vein. Believe me, I have the screaming heebie-jeebies over that stuff.
