That is the actual definition of champagne. Everyone agrees on this, it was settled long ago. What /ck/ thinks, or what you think, is irrelevant.

There is a term "méthode champenoise" which is what anyone who has the slightest clue about wine says when referring to champagne-style wines made in other parts of the world, e.g. New Mexico or California, which both make pretty decent wine in that style. You may not be aware of this, but there are also other styles of sparkling with that are not made in that method, and do not taste like champagne.

Of course you seem like one of those people who hasn't really tasted much wine, but maybe saw a funny 15 minute Penn & Teller about wine and this gave you enough information to toss off a few smart-ass remarks about this, as you do with most other topics on which you are completely ignorant.

Champagne (region) is only 300 km from my home.
While I have a few nice ones in my cellar, I always prefer a good Crémant, or Cava instead of a bad champagne.
