That's not true.
Lobster has always been a highly prized delicacy. The part about "served to prisoners" was a local phenomoneon--they had a glut of lobsters in New England but remember this was in the days before refrigeration. They may well have been worth big money, but there was no way to transport them like there is today. They were only dirt cheap temporarily, and only in those areas where they caught a lot of lobsters.

Seafood was used to feed prisoners because it was abundant, not necessarily because people hated eating them. People were definitely way less avid about eating say, oysters. Not because of the flavor or anything, but because you could get really fucking sick off of them.
