I haven't ordered steaks in a restaurant in years because it is always a disappointment. You pay $20+ for a steak and you expect it to be good but it rarely is.

I'd rather just pay $10 for the steak, $1 for a potato, and a couple of bucks for a vegetable side dish, cook it at home EXACTLY the way I want my steak and just be done with it. There aren't even that many dishes to do after cooking a steak dinner.

But at a restaurant my strategy is to order "medium" because I'm not that picky, so if it is medium rare - medium well, it is close enough that I can eat it and not be a whiny bitch that sends the steak back just for them to smear their ass crack sweat on it.

There's a big difference between medium rare and medium well, though. I don't see how you can be happy with whatever they give you. If you're paying them, everything should be to your specifications.

Like I said I'm not picky, I was raised in a poor family so I was fortunate in a weird way that I can eat nearly anything without complaining.

But I'm not necessarily happy about it.

I agree with you that "If I'm paying them, everything should be to my specifications" but the culture of the food service industry is the most entitled bunch of shits that ever existed. "Oh god these fucking asshole customers come in 1 hour before we are about to close?! I WANNA GO HOME!"
"So what if it took me 15 minutes to get you your drinks, WHERE IS MY TIP?!"

So just to avoid the hassle and to ensure better results, I just cook at home.

Some days I want a medium rare steak.
Other days I want a medium well steak.
It really depends on what I'm craving. Each have their own character.

but straight rare, or straight well just are too extreme for me.
Straight rare seems like an ingredient rather than food
and straight well seems like a failed attempt at cooking a steak.
