Two parts readily come to mind. World War 2, and anime. Our involvement on the pacific front and direct engagement / subsequent occupation of Japan brought a lot of their culture and ideas into our public awareness. Going forward with how our industries and the world economy works, along with our media, they're the most "exotic" foreign place in the East that comes to mind. China has faded pout in recent times, Vietnam is seen as a shithole with agent orange and dud cluster bombs everywhere to this day, and everyone hates Russia. Thus, Japan.

Anime is self explanatory, given that this is an imageboard made more or less for anime and ripped from Japan anyway, and the average demographic here is late teens to mid twenties.

It depends on what type of Japanese food you're talking about. Ramen (at least the good stuff) usually is usually very deep and flavorful. Tonkotsu style ramen for example is made by boiling pork bone, fat and collagen for hours and hours until you have a very thick broth. It seems right up your alley since you want greasy and savory.
