I throw a thin layer of lit lump charcoal in the weber, then on top of that put 3-4 split red oak logs. Let it burn for about 15min and then grill over slight flame. God tier grilling over wood.

Briquettes always give the meat such an overpowering smoke flavor. I can see it being useful for barbecuing but if you're just doing steaks or whatever, it's too much. Takes a fucking age to get anything done on charcoal, and you have so much more control over the temperature with gas.
