I will sometimes cut my burgers in half to reduce sloppiness and to make them easier to eat. But I would never cut one into little chunks.

Over the last decade a number of "nice" places have started taking their burgers seriously. Chefs are paying attention to the blend of meat used in their burgers, and working to make them standout items on their menus. It used to be the burger was grudgingly offered on the menu, now they're proud of it.

Pic related is a Michelin star burger. I have had it. Fucking delicious, and I'm not even the biggest fan of burgers.

While I do love the spotted pig burger, and also the minetta burger, it's probably worth distinguishing fancy burgers by legit chefs, from trophy burgers for retards consisting of a ground mess of kobe with gold foil and a chunk of foie gras and a dollop of caviar thrown on top served with a bottle of dom p. I am thoroughly in favor of burgers being well executed, and I'm willing to pay for it. I am not in favor of making burgers fancy for the sake of making them fancy. But you usually see that kind of thing more in las vegas and socal.

While I agree in principle, let's not forget BD Bistro's burger stuffed with foie gras is good by all accounts. I have yet to try it (because I'm not particularly interested in a $35 burger), but it's pretty much the one that started all that shit.

Boulud is as legit as it gets though, and teh fact that the foie is invisible, and there's no gold foil, and the burger itself is, frankly, kind of ugly, makes me willing to accept that he probably has his reasons.
