Is there some method of cooking eggs that completely dries them out? I can't stand the wetness.

i tend to just scramble them until they look like the egg you find in egg fried rice. i don't know whether that's normal or not though, most people i know make a sort of wet mush so i assume that's what normal scrambled egg is

Also apart of the appeal of a Poached Egg is the wispy ends.

If you don't want to perfect the old fashioned way Sous Vide in the shell works well followed by a quick bath in simmering water. That's how modern high end restaurants do it.
