Translated a basic recipe for norwegian pancakes for you lot.

3 dl flour
1/2 ts salt
6 dl milk
3 tbs butter
3 eggs

Mix half the milk with the flour and salt together until all the mixture is smooth and lump-free. Melt the butter and add it to the mixture after letting it cool a bit. Add the rest of the milk gradually while stirring, then mix in the eggs for last.

Let the mixture rest for at least 20 minutes.

Pan-fry in butter on medium heat. Use just enough mixture to cover the surface of the pan, no more. One or two minutes for each side.

It's standard to mix the wet and dry ingredients separately, combine everything together (dry into wet if you're that sperg), and then mix until just incorporated. Whisking a whole egg into the batter will encourage more gluten formation (provided that you're not using a gluten-free flour) because more mechanical action is occurring to break the egg and to mix the entire batter. I don't have any pictures, but I have a recipe for carrot pancakes that is really good. Best of all, it's impossible to fuck up.

The first thing I do is cut up four or five carrots into small bits and put them in a blender with a little water. Then I pour the blended carrots into a strainer over a bowl and the liquid that goes through is carrot juice that you can drink right away. What'll be left is is a large amount of carrot mush. Mix this mush in with any pancake mix. Go like 60% pancake mix : 40% carrot mush ratio. Now, the reason why it's impossible to fuck up is that I've never had a carrot pancake burn. It takes longer to cook than a regular pancake, but in my experience I've never had a side go black after leaving it in the pan for several minutes.

It tastes good.
