One thing you must beware of is that there are two tiers of kebab/shawarma meat:

Main difference to Gyros is the kind of animal used. Gyros is more likely to be pig meat, whereas Döner is a type of fast food also suitable for muslims.

So the meat used is more likely to be beef, lamb or chicken. It is rumored that ingredients also may contain traces of doves, rats, raccoons or every other possible type of fauna living in large cities.

Most Döner fast food joints have a special sauce. Don't ever inquire about the special ingredient.

In some districts of the town I live in, there are Döner joints every 100m, it is the most common type of fast food. American companies like McDo, KFC, Burger King have only a little amount of market share here ..

I've never had doner kebab / gyros / shawarma (uncultured American here, not entirely sure what the difference is) but they all look amazing. Would have had to drive over 3 hours before to try some, until out of nowhere a Mediterranean restaurant popped up less than 10 minutes from my house. Doner and Gyros are vastly different though.

Gyros is made from pork, Doner is made from lamb. The sauce, which is, to me at least, the most important ingredient, is also very different. Gyros sauce is regular Tzaziki, Doner sauce is kind of a mystery but it doesn't have cucumber or herbs in it, it's just some kind of yoghurt/sour cream mix with garlic. Doner is also ideally sliced very thin while gyros is cut into thicker chunks. I prefer Doner by a lot.

I was driving down the road the other day and there was a giant sign that read "KEBAB". So, being a hungry young man, I pulled over and crossed the median to try my first kebab. I get in, they were really nice, I brought in my laptop to do some homework. I order the doner kebab as I had seen in posted around ck a few times. I didn't know what I wanted for my side so the motherly, plump ?Greek? lady orders the humas for me. I would have rather had something I never tried before, but I went with it.

The humas was served along side another dish of oil with some sort of tomato paste sunk to the bottem. Can you tell me what this was for? I just dipped my warm pitta slices in them before scooping up the humas.

The kebab was served with the feta sauce (forget what the name is) greek salad, white and wild rice mix on a flat plate. It was great but I was really sad it didn't come in a sandwich. I was expecting something like OPs pic. I even went as far as ordering another pitta so I could make my own, but she brought it back in quarters like she did for my humas.

I think they do more of an authentic style. Which is strange since it's in a really bad spot in the middle of a small ass city in illinois. There were like 14 sides to choose from. What do I get next time thats a bit more adventurous?

Also she served me free rice pudding and it was flame.

I want to give them more business because she was a nice lady, and I like places like that. But, what I ordered wasn't worth going back.

Could you help me out for what to choose next time?
