Though, admittedly, looking up the restaurant you posted about, it's owned by Americans of Danish background. Now I've been to Danmark many times as a kid as we used to go there on holiday and have had similar food there. Specifically, boiled cod with a mustard-or-mayonnaise-based sauce (don't remember which since I haven't been anywhere near the country in about 20 years), pickled cucumbers and boiled potatoes.
