Chicken is shit in comparison (although a fuck ton cheaper).

I love a traditional roast duck, stuffed with apples and prunes. I also love the Chinese style with the red shiny glaze on it. I also like to smoke duck, then shred the meat and use it in tacos.

My duck has the appropriate cross cuts to drain while cooking. I am catching that wonderful fat to make some fried potatoes in.

OH YEAH!

Nothing pisses me off more than people claiming duck tastes like greasy chicken. If its greasy, you fucked up, it should be moist and juicy, no doubt, but greasy? Not at all. And it doesn't taste like chicken in the slightest.

Seems like a bad idea.

The beer can method is good for chicken because it is a dry meat but duck is plenty moist enough and that method also mitigates the crispy, crispy skin of the duck.

Use the stand though! Roasting a duck on a beer butt stand allows it to drip better and you get a crispy ass duck and more duck fat for cooking later.

Duck is sitting on the counter wrapped in foil right now.

Gotta let it simmer in those juices a little before I carve that fucker up.

Making some steamed squash for the side seasoned with some Ms. Dash.

Alarmingly, I had very, very little run off from the duck. Maybe a quarter of a cup of run off.

Shit.

Flesh was not crispy and the duck was kind of tough.

Going to try again tomorrow but will carve the duck up instead.

Then again it might be from me using an indoor rotisserie too instead of a grill.

It was tasty though, just the textures were off.
